Organic Parmigiano Reggiano 24 months. Selected and packed by the Brugnoli Family, one eighth of a whole cut is a quite big piece of cheese in terms of quantity, nearly 4.5 – 5kg. Carefully selected and stone-cut, it is supplied as the other cuts in its typical vacuum heat-shrinking packaging, with a preservation time of 6-8 months as stated on the label.
Convenient for large families or special convivial occasions such as wedding banquets, parties or Sunday dinners. It is certainly an economical pack size, that can be easily cut and preserved.
PRODUCT PROFILE
PDO Parmigiano Reggiano DOP is made of raw milk, partially skimmed. The milk made by us, is directly transferred from the milking room to the manufacturing room through a milk duct. It cannot undergo thermal treatments or centrifugation processes. Similar to the 1-kg pack, in 500 grams and one eighth of a whole cuts as in this case, the organoleptic properties are the same as those that have always typified the mildness of Parmigiano Reggiano DOP made by the Brugnoli Family.

With its unmistakable, soft flavour and sharp at the same time, Organic Parmigiano Reggiano DOP is the king of sound and balanced diets, with a high nutritive value. It is also an excellent source of high biological value proteins, minerals and vitamins.
IN THE KITCHEN
Parmigiano Reggiano DOP is excellent in the preparation of main courses: as thin slivers on thinly sliced meat or fish, roast beef, dressed with garden rocket and a drop of EVO. Its medium seasoning makes it possible to pair this particular type of Parmigiano Reggiano DOP with more bodied red wines. The rind of this cheese is suitable for consumption: after cleaning it with a rasp, simple recipes can be prepared, such as roast rinds, baked or grilled rinds or rinds cut into small cubes to be later added to vegetable soups.
ONCE UNPACKED
Organic Parmigiano Reggiano DOP characterized by long ripening and low water content, is preserved more easily than many other cheeses. In fact, in its vacuum pack, it can be kept in the fridge at a temperature of 4-8 degrees centigrade for several months, provided that it is well sealed and intact. All packagers are in charge of indicating on the pack a date until when the product can be used, that may vary from 6 to 8 months. Once the packaging has been opened, according to the old method of grandma Rommy, it should be kept wrapped up in a kitchen blotting paper to keep its organoleptic properties intact and then wrapped up in another kitchen foil. Those who have a vacuum-sealing machine may cut it in easy-to-use small cuts. Once vacuum packed, the product can be kept in the fridge for 6-8 months.
