From the Province of Parma, Italy, Parma Noble Food has selected for you the most renowned salami: PGI Salame Felino.
The pork is specially selected from animals which are fed on acorns, after selection it is processed with salt and spices and placed within natural casings to give its unique shape.
A minimum aging process of sixty days brings that distinctive flavour. It is only those that are deemed suitable which are branded with PGI and through a long tradition of craftsmanship which can create a salami such as this.
The production of this salami, for over eight centuries, is carried out with a limited amount of salt and using the characteristics of the Felino territory It is due to the temperature, humidity and air circulation in Liguria which provides the perfect environment for the curing process.
The result: an intense aroma and delicate flavour.
KNOW WHAT YOU ARE EATING
This salami is composed of 70% lean and 30% fat. PGI Salame Felino is low in salt, gluten free and no ingredients used are genetically modified. Therefore can be eaten without guilt!
IN THE KITCHEN
The PGI Salame Felino is one of the most popular within the Parma area and especially enjoyed with a Lambrusco IGT, from the mountains. Traditionally cut on the diagonal to obtain a longer slice than the circumference of the salami and the thickness of a grain of pepper.
Its characteristics make it versatile in many recipes. However, to enjoy it at its best, why not try it between two slices of fresh homebaked bread.
It should be stored in the refrigerator.
We recommend that you first wrap it in plastic and then in a dish towel to prevent the absorption of odours.
However if vacuum packed it will be conserved for longer.
