PRODUCT DESCRIPTION
WHAT YOU ARE BUYING
From the Brugnoli Family reserve, we offer a piece of Organic Parmigiano Reggiano PDO aged 72 months, cut with the traditional “rock cut” method and then packed in a thick vacuum bag.
This packaging helps protect the product during preservation and delivery, preventing the firm and sharp rind, shaped by the long ageing process, from damaging the vacuum bag.
This Organic Parmigiano Reggiano 72 months is a rare long-aged Italian cheese from Parma, selected for those who want to buy authentic Parmigiano Reggiano online and receive it carefully packed across Europe.
PRODUCT PROFILE
We have selected wheels of Organic Parmigiano Reggiano PDO with a particularly important ageing period, from 48 months up to the rarest long-aged selections.
Being able to offer this cheese today in 1 kg packs is a great satisfaction for us, although it requires special attention from those who cut and prepare it. At this stage of maturation, the texture of Parmigiano Reggiano becomes extremely friable and naturally darker after many years of ageing in our storage rooms.
On the palate, it offers an explosion of deep and surprising flavours. It remains pleasantly melting, with rich sensations and an unexpectedly sweet finish.
WHAT YOU ARE EATING
This well-aged Parmigiano Reggiano PDO has excellent nutritional properties, starting with its very high calcium content and a naturally limited amount of fat.
It is rich in proteins, branched-chain amino acids, potassium, zinc and magnesium, as well as vitamins such as vitamin A, B6 and B2.
Despite its long ageing, this Organic Parmigiano Reggiano 72 months remains a highly digestible cheese, suitable for those looking for an intense, refined and authentic Italian food product.
IN THE KITCHEN
Here, there are no fixed recipes… only imagination.
This 72-month aged Parmigiano Reggiano is ideal for tasting in flakes, for gourmet boards, for refined aperitifs or as a special ingredient in elegant Italian recipes.
Its intense and complex character makes it perfect with aged balsamic vinegar, structured wines, honey, preserves or seasonal fruit. It is also a valuable choice for those who want to bring a rare and distinctive Italian cheese experience to the table.
AFTER OPENING
Its preservation needs no special care. In this long-ageing selection, the cheese has already completed the most important part of its maturation.
Thanks to its structure and low water content, the product can be kept in the fridge wrapped in absorbent kitchen paper and further protected in a rough paper bag, such as the one used for bread.
