Organic Parmigiano Reggiano 24 months. The 500-gr chunk, as the picture suggests, can be distinguished by its cut.
It is proposed in a particular version chosen by packager.
The original wheel is deprived of the lower and upper side, thus leaving only the round side girth where the caption Parmigiano Reggiano is impressed. Then the wheel is stone cut into many wedges that keep its flavour and mildness unaltered.
The 500-gr chunk is convenient for use in the kitchen. Just consider that, to dress a dish, one family needs 100 grams of Parmigiano Reggiano DOP on average. It is excellent as an aperitif in company.
For the Brugnoli Family, organic farming is a production method where only natural substances can be used, i.e. those substances provided by the nature with the exclusion of any synthetic chemical products such as herbicides, chemical fertilizers, Genetically Modified Organisms (GMOs). Only alpine grass rich in beta-carotene harvested in multi-species meadows is used to feed cattle. The milk so obtained, added to the art of master cheese-maker Enrico and to the long ageing, make the Organic Parmigiano Reggiano DOP made by the Brugnoli Family unmistakable for its intense pale yellow colour.
KNOW WHAT YOU ARE EATING
Organic Parmigiano Reggiano DOP is a highly digestible cheese rich in flavour and important nutrients such as calcium, phosphorus, trace elements and vitamins; a precious source of energy for all dietaries. One hundred grams of Parmigiano Reggiano DOP meet 85% of the daily requirement of phosphorus and are sufficient to meet calcium and vitamin B12 requirements. It is recommended for growing children and to prevent and limit any bone pathologies (such as osteoporosis) in the elderly.
IN THE KITCHEN
Organic Parmigiano Reggiano DOP is excellent:
- alone as a snack or aperitif, with a simple slice of bread or served with jam, dried fruit, nuts, honey and a good glass of wine
- to enhance dishes
- grated or in slivers adds flavour and aroma to any pasta, risotto, soups but also to side dishes, vegetables and fresh salads
- as an ingredient in stuffed pasta, quiches, baked vegetables and many traditional recipes such as aubergine, tomato and Parmesan bake.
Organic Parmigiano Reggiano DOP is characterized by a long ageing and low water content, and is preserved more easily than many other cheeses. In fact, in its vacuum pack, it can be kept in the fridge at a temperature of 4-8 degrees centigrade for several months, provided that it is well sealed and intact. All packagers are in charge of indicating on the pack a date until when the product can be used, that may vary from 6 to 8 months. Once the packaging has been opened, according to the old method of grandma Rommy, it should be kept wrapped up in a kitchen blotting paper to keep its organoleptic properties intact and then wrapped up again in an aluminium foil; by doing so, this product will be on your dining table for several months without losing its aroma.
