Packed in a vacuum heat shrinking packaging even more resistant to preserve its quality, it is delivered in a special container.
In its 36-month aged version (old) this is the ideal product for those who are allergic to lactose. Its friability and granularity are obtained through this long ageing process. Compared to the 24-month aged cheese, it is drier and its taste sharper and very intense. It is distinguished by the quite evident presence of crystals of an amino acid, tyrosine. And it is precisely this amino acid that causes the vaguely sandy feeling experienced when one bits into this Parmigiano Reggiano DOP which, nevertheless, does not lose the typical sweetness of the organic raw ham made by the Brugnoli Family.

IN THE KITCHEN
What a better occasion could there be to appreciate the half wheel of Parmigiano Reggiano DOP other than a wedding banquet, corporate buffets or parties? It can be used to embellish your parties served on a wood chopping board, starting by tasting its slivers cut by using the appropriate knives.
To preserve the half wheel at best, it should be wrapped in a cotton dishtowel and kept in a dark room at a temperature in the range of 6-8 Degrees centigrade. Another possibility is cutting it into fourths or cuts more convenient for you and then placing them in the fridge after having wound them up in food paper. While those who have a vacuum sealing machine can pack them again thus assuring a perfect preservation in the fridge for as much as 6-8 months.
