From the Brugnoli Family reserve, we propose a chunk of Stone-cut Alpine Organic Parmigiano Reggiano DOP that will be later packed in a thick vacuum bag to prevent that the rind rendered solid and sharp by the long seasoning may make a hole in the bag.
We have selected for you wheels of Organic Parmigiano Reggiano DOP with the noticeable ageing of 48 months up to the unobtainable 84 months. We proud ourselves on offering in these present days this cheese in 1 kg packs, although this requires special attention by those in charge of cutting it. In fact, at this stage of maturation, the consistency of Parmigiano Reggiano DOP is highly friable, grown dark by the time spent in our warehouses, and presents us with an explosion of surprising tastes. When tasted, it is still fondant with a fat touch yet inexplicably sweet.
KNOW WHAT YOU ARE EATING
This well seasoned Parmigiano Reggiano DOP has excellent nutritive properties, starting from its very high content of calcium, and minimum quantity of fat. It is very rich in proteins, cranched-chain amino acids (very useful for those who love sports), potassium, zinc and magnesium, and also in many vitamins such as vitamin A, B6 B2. In spite of its long seasoning this is a highly digestible cheese.

There are no recipes… just your fantasy!
No special attention should be paid to its preservation. In the long ageing selection all is done. Thanks to its consistency and low water content, the product can be kept in the fridge wound up in absorbent kitchen paper further protected by a rough paper bag, as that used for bread.
