Not a common cheese, but a chunk of Organic Parmigiano Reggiano DOP made by us, stone-cut to enhance its appearance and packed in vacuum heat-shrinking packaging to guarantee its preservation over time at best. The classic chunk of about 1 kg pack is the right quantity suited for family use.
PRODUCT PROFILE
Organic Parmigiano Reggiano DOP made by the Brugnoli Family stands out for its straw yellow and for its intense fruity flavour accompanied by a rare mildness when tasted. In the 24 month aged version, it is silky, with a mild and soft texture.
KNOW WHAT YOU ARE EATING
A complete food, natural and with a high nutritive value; it is the right answer to a whole, consistent and balanced diet. In fact, Organic Parmigiano Reggiano DOP is a real concentration of nutrients: just consider that as much as 16 litres of superior milk are necessary to make 1 kg of cheese. Organic Parmigiano Reggiano DOP is low fat, proteinous, contains less lactose and has an excellent concentration of calcium.
IN THE KITCHEN
Aged 24 months, Organic Parmigiano Reggiano DOP matures with a right balance of mildness and tastiness thus appearing soluble, friable and grainy at the same time .
If grated, it enhances your dishes, such as a good risotto, a soup or a soufflé. Also its rind can be used in such dishes as minestrone (thick soups), vegetable purees or just grilled. It perfectly pairs with fairly full-bodied red wines and it is excellent if cut into slivers and put into a salad. At the end of meals, it is superb with dried fruit, plums, dried figs and pears.
ONCE UNPACKED
Organic Parmigiano Reggiano DOP, characterized by a long ripening and a low water content, is preserved more easily than many other cheeses. In fact, in its vacuum pack, it can be kept in the fridge at a temperature of 4-8 Degrees centigrade for several months, provided that the packaging is intact. All packagers indicate a best used date on packaging, that can vary from six to eight months .
Once the packaging has been opened, according to the old method of grandma Rommy, it should be kept wrapped up in a kitchen blotting paper to keep its organoleptic properties intact, and then wrapped up in another kitchen foil: in this way, the product will make a fine show on your table with all its flavour for several months.
